Lisa’s Gourmet Announces New Line of Un-Traditional Cheesecakes
Springfield, IL (PRWEB) May 25, 2006 -- Lisa’s Gourmet, a gourmet cheesecake maker, has introduced its new line of cheesecakes, Crespelle Cheesecakes and Cheesecake Cassatas. Each cake is made fresh, to order, never frozen, using fresh handmade crème fraîche and fromage blanc instead of sour cream and cream cheese.

I wanted to create a cheesecake that stepped outside those bounds. Creme fraîche is the French equivalent to American sour cream. It has a much tangier and slightly nutty flavor than sour cream. It can be used for sweet or savory dishes and flavored in any way possible. Because of the process used to create it, it also keeps longer than sour cream (up to three weeks in the refrigerator).
Fromage Blanc is a cow's milk-based soft cheese with similarities to traditional cream cheese, and depending on the length of time used in processing, can also be similar to a thick yogurt. Because it is made with milk as opposed to cream, it has 30% less fat that cream cheese. It also has a slightly tangy flavor to it and lasts longer than cream cheese. Fromage blanc is traditionally served with fresh fruits or vegetables, and can be preserved in oil with either fruits or herbs. Preserving fromage blanc allows it to last up to one month in the refrigerator.
Crespelles (pronounced cres pehl lay) are the Italian version of crepes. There isn’t much difference between the two, other than crespelle cheesecake sounds better than crepe cheesecake.
A cassata is an Italian cream-filled cake. Lisa’s Gourmet has taken two of the world’s best cuisines and put them together to create these light and delicious cheesecakes.
