Lotus Root

Lotus Root

The rhizomes or roots of the lotus plant.

These are used as food extensively throughout most of Asia – not only in China, but Japan, Korea, Thailand, Vietnam and so on. They are often consumed as a vegetable, and usually cooked in soups, or sometimes sautéed or steamed. They are also used in salads, as well as in desserts such as lotus roots stuffed with sweet glutinous rice.

When cut along the cross-section, the "holey" structure of the root is show-cased to very nice effect, in a flower-like pattern.
