Asian Gourd: Shi Gua / Ketola

To prep a “shi gua” – step 2:
Cut the gourd into more manageable 3-4” sections; cut each section in half lengthwise; and scoop out the large section of inner core and seeds.

It is important to remove as much of the white seeded core as possible, as this can be bitter when cooked. Only a thin layer of green gourd will be left.
